Six Seasons: Smashed Broccoli and Potatoes with Parmigiano and Lemon

I know…I know…this is a picture of a big piece of steak on Meatless Monday. But here me out. We rarely eat steak. And when I saw this mash recipe in Six Seasons I couldn’t stop thinking about how it would go so nicely with a piece of steak. How right I was. This is one of the best meals we’ve had in a long time and it has me thinking that with Aaron getting a new BBQ for Father’s Day I’m going to start experimenting with a different side each time we have steak (which as I said won’t be that often) to build up a repertoire of side options.

Basically you boil potatoes and 2/3 of the way through you add broccoli and continue cooking. Then you drain and return them to the pot and mash them together with some Parmigiano, lemon juice, olive oil and season with salt and pepper. Perfect side to make a perfect meal.
