Okay, okay…so we ate this as the main part of our meal last night and it has bacon in it…but I didn’t post about it until Tuesday, so all is forgiven, right?!
I used the recipe for The Best Baked Beans from Alison Roman’s Dining In and it is superb! It calls for white beans (I used canned), streaky bacon, garlic and onion, fresh thyme, veggie stock, parmesan and white wine. I topped it with wholemeal breadcrumbs from my freezer that I added the optional red chile flakes too…I highly recommend adding them, it adds the best kind of zing to the dish. It was a very easy dish to throw together and is definitely a filling comfort food.
Changes I would make next time – reducing the bread crumb amount, 2 cups is way too much, and I would use a different cheese as the parmesan stuck to everything and did not melt in.
