My daughter is always pushing the boundaries with what she wants in her school lunch box. Lately it’s been jelly cups. You know, set flavored colored sugar water?! I say no every time she asks but thought I’d make up a healthier alternative that she could enjoy for afternoon tea.
What we did was buy an 820 gram can of fruit salad in juice, we drained off the juice and added apple juice with no added sugar to make 400 mL. Then we stirred in one sachet of vegetarian gelatine and put it in a saucepan until it started bubbling. Then we poured it back over the fruit and portioned it into little cups and refrigerated. We were able to get 8 small containers of jelly cups (2 of them didn’t make the photo because our youngest two are in jelly heaven!).
