Today we see who goes up against Bravetart in the Finals as to which is the best pumpkin pie!
This is such a good pie. There are so many little details that make it special. The pecan filling, the cream cheese in the crust, the pumpkin pie filling that has been cooked slightly, the 12 pecans that decorate the top. Such a beautiful and great tasting and very Thanksgiving appropriate dessert.
I feel dreadful about what I did to the pastry on this poor pie. But I didn’t have time to start again so we just rolled with it and unfortunately I think the end result suffered because of it. This is one of the few pies that requires you to eggwash the pastry during the prebake. I screwed up and brushed it on before I filled it with pie weights instead of after I pulled them out. So we had a bit of cooked eggwhite on it and it ended up sticking horribly to the pie plate. I also screwed up in the mixing process and added the full amount of liquid when it probably only needed half the amount. So it was a sloppy mess. I’m surprised we got a pie at all. For a pie that we absolutely loved in the 2nd round, this did not wow us even a tiny bit.
This too is just such a great dessert. Aaron didn’t think it was as appropriate for Thanksgiving as The Baking Bible’s pie, but I assured him that it would be totally welcome at a Thanksgiving table. I love the nutty crumb on the bottom and the vanilla tang of the sour cream topping. Again there is so much thought and detail put into this cheesecake that it makes it so beautiful.
So how do we decide on a winner between two obvious front runners?! I honestly didn’t know what to do. Aaron wanted The Baking Bible pie and the older boys both wanted the cheesecake and I was firmly on the fence so the win had to go to the cheesecake from Golden. It is going to be so interesting to see how it stands up in the finals next week.
